Pudsey’s favourite Strawberry Jam Cupcakes are Bake Sale ready and perfect for a picnic!

You will need:
120g softened butter
120g caster sugar
120g sieved self raising flour
2 eggs
1 tsp vanilla extract
6 tbsp strawberry jam
6 tsp desiccated coconut or sprinkles
Ìý
Let’s get jamming:
First, turn the oven 160 degrees (fan).
In a large bowl mix the butter, sugar and eggs together.
Next add the flour and vanilla extract and whisk together.
Divide the mixture between 6 large cupcake cases.
Bake for 15 minutes.
Remove and place them on a cooling rack.
Once cool, add a dollop of strawberry jam onto the top of each one followed by a sprinkle of desiccated coconut.

You will need:
1 and ½ cups of porridge oats (120g)
½ a cup of jam (120g)
1 large banana
1 handful of sprinkles

Let’s get jamming:
In a large bowl add the oats, jam and banana.Ìý You could use a rolling pin, spoons or your fingers to mix thoroughly.
Next (with wet hands!) Ìýroll the mixture into golf-ball sized balls.
Place the sprinkles in a bowl and one by one, roll the balls in the sprinkles until covered all over.

You will need:
1 sheet of ready rolled short crust pastry
12 tsp of jam

Let’s get jamming:
Preheat the oven to 180 degrees fan.
Roll out the pastry. Use an upside down cup or cookie cutter, cut out 12 small circles and add them to a greased mini muffin tray, pushing them into the corners and edges until they form little cups.
Dollop a teaspoon of jam into the centre of each one.

Top Tip: You could use the leftover pastry and a knife to create little Pudsey bear heads and pop one on top of each tart. How else could you decorate?

Finally, place them in the oven for 20 minutes.

Then remove, leave to cool before popping them out for later.

You will need:
1 sheet of ready rolled puff pastry
125g icing sugar
15ml water
8 tbsp strawberry jam
1 handful of sprinkles
A splash of milk

Let’s get jamming:
First, turn the ovenÌý to 180 degrees fan.
Slice the puff pastry into 4 long rectangles and add 2 tbsp of strawberry jam to one side of each rectangle.
Fold over the uncovered side to create 4 parcels and use a fork to seal down the 3 remaining sides.
Place them on a tray lined with greaseproof paper and brush with a little milk.
Bake for 25 minutes and then remove to cool completely.
Meanwhile, combine the icing sugar and water to create a glaze. Once the pop tarts have cooled, drizzle over the glaze followed by some sprinkles and you’re done!

To make:
Mix the flour, eggs and milk in a large bowl until smooth.
Heat the butter in a large pan for around a minute.
Cook each pancake for 1 minute on each side.
Layer your pancakes with your choice of toppings.

You will need:
200g of 91ɬÂþ & Rosie Strawberry Jam
150g unsalted butter
150g golden caster sugar
2 eggs
150g self-raising flour
250ml double cream
1/2 tsp vanilla extract
A little icing sugar to dust
Ìý
To make:
Pre heat the oven to 180' and line a tray with 12 muffin cases.
In a large bowl combine the butter and caster sugar then add the eggs.
Stir in the vanilla and add the flour a little at a time.
Split evenly between the cases and bake for 15-20 minutes or until the sponges are golden.
TOP TIP pop a knife into the middle of the cake and if it comes out clean the cake is cooked thoroughly... if not you can cook for a couple more minutes and check again.
Once cooked leave to cool and then remove the paper cases.
Top 6 cakes with the whipped cream and our 91ɬÂþ & Rosie Strawberry Jam and pop the remaining 6 cakes on top.
Dust with icing sugar andÌývoila!
Enjoy with fresh strawberries as an extra special treat!
