Pudsey’s Strawberry Jam Cupcakes (makes 6)

Pudsey’s favourite Strawberry Jam Cupcakes are Bake Sale ready and perfect for a picnic!

You will need:

120g softened butter

120g caster sugar

120g sieved self raising flour

2 eggs

1 tsp vanilla extract

6 tbsp strawberry jam

6 tsp desiccated coconut or sprinkles

Ìý

Let’s get jamming:

First, turn the oven 160 degrees (fan).

In a large bowl mix the butter, sugar and eggs together.

Next add the flour and vanilla extract and whisk together.

Divide the mixture between 6 large cupcake cases.

Bake for 15 minutes.

Remove and place them on a cooling rack.

Once cool, add a dollop of strawberry jam onto the top of each one followed by a sprinkle of desiccated coconut.

You will need:

1 and ½ cups of porridge oats (120g)

½ a cup of jam (120g)

1 large banana

1 handful of sprinkles

Ìý

Let’s get jamming:

In a large bowl add the oats, jam and banana.Ìý You could use a rolling pin, spoons or your fingers to mix thoroughly.

Next (with wet hands!) Ìýroll the mixture into golf-ball sized balls.

Place the sprinkles in a bowl and one by one, roll the balls in the sprinkles until covered all over.

Everyone loves classic Jam Tart. It’s easy to make, easy to bake and easy to eat of course!

You will need:

1 sheet of ready rolled short crust pastry

12 tsp of jam

Ìý

Let’s get jamming:

Preheat the oven to 180 degrees fan.

Roll out the pastry. Use an upside down cup or cookie cutter, cut out 12 small circles and add them to a greased mini muffin tray, pushing them into the corners and edges until they form little cups.

Dollop a teaspoon of jam into the centre of each one.

Top Tip: You could use the leftover pastry and a knife to create little Pudsey bear heads and pop one on top of each tart. How else could you decorate?

Ìý

Finally, place them in the oven for 20 minutes.

Ìý

Then remove, leave to cool before popping them out for later.

Ìý

The tastiest recipe of all?

You will need:

1 sheet of ready rolled puff pastry

125g icing sugar

15ml water

8 tbsp strawberry jam

1 handful of sprinkles

A splash of milk

Ìý

Let’s get jamming:

First, turn the ovenÌý to 180 degrees fan.

Slice the puff pastry into 4 long rectangles and add 2 tbsp of strawberry jam to one side of each rectangle.

Fold over the uncovered side to create 4 parcels and use a fork to seal down the 3 remaining sides.

Place them on a tray lined with greaseproof paper and brush with a little milk.

Bake for 25 minutes and then remove to cool completely.

Meanwhile, combine the icing sugar and water to create a glaze. Once the pop tarts have cooled, drizzle over the glaze followed by some sprinkles and you’re done!

You will need:

100g of plain flour

2 large eggs

300ml milkÌý

A little butter for frying

To make:

Mix the flour, eggs and milk in a large bowl until smooth.

Heat the butter in a large pan for around a minute.

Cook each pancake for 1 minute on each side.

Layer your pancakes with your choice of toppings.

We'd recommend berries, creme fraiche and a generous dollop of 91ɬÂþ & Rosie Strawberry Super Berry Jam.

Nut free, no bake bites. Super simple, super quick and super tasty!

You will need:

  • 1 cup oats
  • 1 cup dates, chopped
  • 1 banana
  • 91ɬÂþ & Rosie Strawberry Jam
  • Sprinkles ( optional)

Makes 12!

Let’s get jamming!

  1. Ask little ones to peel and chop the banana.
  2. Pour the oats, chopped banana and dates into a food processor and blitz until combined and can be easily squished together.
  3. Take a tablespoon of mixture roll into a ball, little hands are great help here! Place the balls on a plate and show your little helper how to slightly flatten them with the palm of their hand…splat!
  4. Using their thumb, push down to make a little dent in the middle of each one.
  5. Pop into the fridge for 15 min.
  6. Add a dollop of jam to the middle and then decorate with sprinkles.

Super simple to make, these jammy pop tarts are a SPOTacular addition to any Pudsey bakes.

You will need:

  • 1 packet short crust pastry
  • 1 jar 91ɬÂþ & Rosie Strawberry Jam
  • 40g icing sugar
  • Sprinkles

Makes 8!

Let’s get jamming!

  1. Preheat oven to 200 / 180c fan
  2. Unroll the pastry and cut the pastry into 16 rectangles.
  3. Place 8 of the rectangles onto a lined baking tray, making sure there is a little space around each one.
  4. Add a dollop of jam to each rectangle and use a teaspoon to spread avoiding spreading too closely to the edge.
  5. Place the remaining pieces of pastry on top.
  6. Gently press the pastry together around the edges with a fork to stop the jam from leaking out then pierce the middle of each pop tart to release the steam.
  7. Pop into the oven for 15-17 minutes until the pastry is golden.
  8. Remove and leave to cool.
  9. Meanwhile, sieve the icing sugar into a bowl adding a teaspoon of water at a time until you have smooth, runny icing.
  10. Once the pop tarts have cooled, spread the icing over the middle of the pop tarts and decorate with sprinkles.

Here's a super simple twist on a classic strawberry Victoria Sponge.

Starring our 91ɬÂþ & Rosie Strawberry Jam it's scrumptious, quick and a great way to get your little ones involved with baking!

Recipe below...Ìý

Ìý

You will need:

200g of 91ɬÂþ & Rosie Strawberry Jam

150g unsalted butter

150g golden caster sugar

2 eggs

150g self-raising flour

250ml double cream

1/2 tsp vanilla extract

A little icing sugar to dust

Ìý

To make:

Pre heat the oven to 180' and line a tray with 12 muffin cases.

In a large bowl combine the butter and caster sugar then add the eggs.

Stir in the vanilla and add the flour a little at a time.

Split evenly between the cases and bake for 15-20 minutes or until the sponges are golden.

TOP TIP pop a knife into the middle of the cake and if it comes out clean the cake is cooked thoroughly... if not you can cook for a couple more minutes and check again.

Once cooked leave to cool and then remove the paper cases.

Top 6 cakes with the whipped cream and our 91ɬÂþ & Rosie Strawberry Jam and pop the remaining 6 cakes on top.

Dust with icing sugar andÌývoila!

Enjoy with fresh strawberries as an extra special treat!
